I started off with Oatmeal Pumpkin cookies. They were such a pain to make, only because I'm missing a few kitchen tools like a sifter (which I don't really need, but it would be handy), larger mixing bowls, more kitchen counter space and a mixer. Not a hand mixer, we own three, but a real mixer. Hey, a girl can dream. ;)
Miguel loved them though. He thought they were delicious. The last batch we made though, he left in the oven too long and the bottom of it burnt. So, it's now my job to remove the burnt bottom so they are the same tasty treat as before.
Next, I made homemade Oreos. Man oh man. I am in love with homemade Oreos ever since my friend McKinsey's mom made a batch, and I was able to try some. Love at first bite.
These weren't as difficult, but Miguel now has a fear of using the hand mixer for any job. :) Let's just say that it's pretty funny when powdered sugar flies everywhere except inside of the bowl, and Miguel is covered in the soft sugary goodness. ;) Okay, not totally covered, but you get the idea. We made the cream cheese filling, and since then we've had to limit our cookie intake. That filling is pretty, uh, fattening. But, all the same, it's soo good.
Lastly, for this week I hope, I made a cake. Yes a wonderfully designed cake of all possible goodness. Okay, I'm just trying to boost up my cake making ability feelings. It's not the best looking cake, but I hope it tastes amazing. Here's the catcher though, it has peach frosting on it. Yes, peach frosting. :) It's delicious! Minus the fact that there is a little too much sugar on it, and it was runny last night, it seems to be just fine on the cake. I might need to practice making frosting, but I do like the peach flavor, as does Miguel.
I have a two other recipes to try out this week, but I'm not sure if I'm up to making anything with sugar in it. ;)
I think I'll just work on my cooking skills. Which, by the way, aren't that bad. When Miguel tells me to experiment, oh, I experiment. ;) Thank goodness for the notebook I'm filling up with yummy food directions and ingredients.
