Goodies

The last little while I've been making it a habit to make some sort of dessert. Sure, Miguel and I don't really need to eat delicious desserts, but I need to learn to make them before little ones are running around. ;)

I started off with Oatmeal Pumpkin cookies. They were such a pain to make, only because I'm missing a few kitchen tools like a sifter (which I don't really need, but it would be handy), larger mixing bowls, more kitchen counter space and a mixer. Not a hand mixer, we own three, but a real mixer. Hey, a girl can dream. ;)
Miguel loved them though. He thought they were delicious. The last batch we made though, he left in the oven too long and the bottom of it burnt. So, it's now my job to remove the burnt bottom so they are the same tasty treat as before.

Next, I made homemade Oreos. Man oh man. I am in love with homemade Oreos ever since my friend McKinsey's mom made a batch, and I was able to try some. Love at first bite.
These weren't as difficult, but Miguel now has a fear of using the hand mixer for any job. :) Let's just say that it's pretty funny when powdered sugar flies everywhere except inside of the bowl, and Miguel is covered in the soft sugary goodness. ;) Okay, not totally covered, but you get the idea. We made the cream cheese filling, and since then we've had to limit our cookie intake. That filling is pretty, uh, fattening. But, all the same, it's soo good.

Lastly, for this week I hope, I made a cake. Yes a wonderfully designed cake of all possible goodness. Okay, I'm just trying to boost up my cake making ability feelings. It's not the best looking cake, but I hope it tastes amazing. Here's the catcher though, it has peach frosting on it. Yes, peach frosting. :) It's delicious! Minus the fact that there is a little too much sugar on it, and it was runny last night, it seems to be just fine on the cake. I might need to practice making frosting, but I do like the peach flavor, as does Miguel.

I have a two other recipes to try out this week, but I'm not sure if I'm up to making anything with sugar in it. ;)

I think I'll just work on my cooking skills. Which, by the way, aren't that bad. When Miguel tells me to experiment, oh, I experiment. ;) Thank goodness for the notebook I'm filling up with yummy food directions and ingredients.

Just Sneak Peek... :)




Woah...

...It's been awhile friends and family. I know, it's been a little too long since we've posted about the wondrous adventures in our lives... ;)

Well, where to start...

Ambria hasn't made a successful loaf of bread since the last post. It will happen though! As soon as I get my thermometer...

Miguel has been excelling in his classes, despite the lack of interest while being in class. He finds himself in the Math Lab and in the Hub more than he does at home. But, he still finds time to spend with me. Thank goodness for a happy wifey, right?

We've spent sometime down in South Jordan with my side of the family. As always, we've had oodles of fun. We even went Halloween costume browsing. Pictures of Miguel will soon follow.

As a side note, Pandora has lifted their 40hr ban of free music enjoyment! My life is (almost) complete. :) Well, when it comes to music....

Now back to the good stuff...
We haven't been up to much. We've been on a few dates around town. We ended up going to a play at the Black Box Theater here at USU and had Root Beer Freezes at A&W earlier that day. Two nights later, Miguel took us to a reasonably priced Japanese place where we ate amazing food. Not too shabby.

Miguel and I have taken to doing laundry together. Yes, bonus points for me. I know longer have to venture off to the laundromat all by myself. Yay!

We finally ended up getting our Wedding Photos from our lovely photographer, Kami. I have sorted through the ones I wanted and sent in the lengthy application for editing... ;) Hahaha right. She'll get them edited when she has the time. Don't worry though, I'll post some on here, but the rest can be found on Facebook. (As they are downloading right now...all 145 of them. If you think that's bad, I had to sort through 905. She thankfully knocked out a couple hundred of the duplicates and blurry pictures.)

Now to just wait for Miguel to finish with classes. Just one more for the day, and we are all set to go home, cuddle up in sweats with hot chocolate and maybe a good movie. Sweet. Thank goodness of cold weather... sometimes... ;)
